PECORINO TOSCANO PDO
Since the 15th century, the Pecorino Toscano has been considered one of the best italian cheeses. It is still produced in a small area among Tuscany, Umbria and Lazio.
For 30 years, the Consorzio Tutela del Pecorino Toscano PDO has brought together about 900 small producers, keeping the Tuscan dairy tradition alive. In particular, our Pecorino Toscano PDO is produced by Caseificio n°117.
The Pecorino Toscano has a typical yellow cylindrical shape. Thanks to a shorter salting period, its flavour is sweeter than the one of other types of pecorino cheeses. This makes it a versatile ingredient that can be used to enhance the Umbrian and Tuscan typical dishes.
