Pecorino Romano PDO is a unique speciality among the farm’s productions. It is completely handmade and it is still treated with the ancient technique of dry salting. As a result, it has a strong and balanced flavour which has been awarded internationally by Gambero Rosso.
The Pecorino shows a thin outer crust enclosing a straw-colored cheese. It can be served as an appetizer or it can be grated on pasta.
