NDUJA OF SPILINGA
Nduja is the most typical culinary delicacy of Calabria. It is made with the fattiest cuts of the pork, blended with local hot chili peppers, stuffed in a natural hog casing and slightly smoked.

Nduja is produced in Calabria, more precisely in Spilinga, a small village on the slopes of the Poro plateau, in the province of Vibo Valentia. Its name comes from the French andouille, which means sausage.
This product is PAT certified, that is to say it is officially recognized as a traditional Italian regional food. As chili peppers are natural food preservatives, Nduja is made without added preservatives. Moreover, chili peppers have antiseptic properties that are beneficial for the body.
