Since 1991 the Salumificio Monsanto has sold typical Tuscan products such as meats, cured meats and cheeses. Among their productions, the Tuscan Guanciale is handmade from italian pigs’ cheeks.
The production process still sticks to the Tuscan tradition: the guanciale is rubbed with salt and spices before the aging process, which can last several months.
The guanciale has an unmistakable flavor, stronger than any other pork product. Each slice is characterized by the high-quality fat surrounding the thin lines of red meat.
This prevalence of fat makes it the perfect ingredient to use as the basis for sauces. It can also be cut in thin slices and tasted alone.
