PECORINO FIORE SARDO PDO
The Consorzio per la Tutela del Formaggio Fiore Sardo DOP was founded in 1999 to enhance the Sardinian sheep’s cheese and to preserve its production. Its main activity is to ensure that the cheese making process is always carried out according to the traditional methods.
The Fiore Sardo is the oldest production of the Sardinian cheese tradition. Its name comes from the Italian word for flower, which was the symbol engraved at the bottom of the moulds used to produce the pecorino cheese. At the end of the production process, a flower resulted on its surface, creating a kind of mark.
The Fiore Sardo shows a thin and wrinkled crust, colored in brown and grey. Its texture is pale, dry and crumbly, especially in the most aged wheels. It pairs with typical Sardinian dishes, but it is also excellent alone to enhance its strong flavour.
