CINTA SENESE PDO

 

The Cinta Senese is the progenitor of all the pigs of Tuscany. Already raised by the Etruscans, it was of great help to the peasants of the Middle Ages during pestilences and famines. The 1340 fresco by Ambrogio Lorenzetti Allegory of Good Government is famous in the Palazzo Civico in Siena, depicting the pig of the Cinta Senese breed.

The production area of ​​Cinta Senese PDO includes the administrative territories of the Tuscany region which reach a maximum altitude of 1,200 meters.

The animals must be raised in the wild or semi-wild from the fourth month of life and must stay daily in plots of land, fenced or not, provided with possible shelter for the night hours or in case of unfavorable weather conditions. The maximum limit of livable animals is 1,500 kg of live weight per hectare. Food is mainly provided by grazing in the woods and / or in bare land sown with forage and cereal essences. Slaughter must take place on animals that have reached at least 12 months of age.
