The “Extravergine Toscano” PGI oil is obtained from the fruits of the olive of the American, Arancino, Ciliegino, Frantoio, Grappolo, Gremignolo, Grossolana, Larcianese, Lazzero, Leccino, Leccio del Corno, Leccione, Madonna dell’Impruneta, Marzio varieties. , Maurino, Melaiolo, Mignolo, Moraiolo, Morchiaio, Olivastra Seggianese, Pendolino, Pesciatino, Piangente, Punteruolo, Razzaio, Rossellino, Rossello, San Francesco, Santa Caterina, Scarlinese, Tondello and their like, present in the olive groves alone or together for at least 95%.

It may possibly be accompanied by one of the following additional geographical terms: Seggiano, Colline Lucchesi, Colline della Lunigiana, Colline di Arezzo, Colline Senesi, Colline di Firenze, Montalbano, Monti Pisani.

Don Gaudio - Extra Virgin Olive Oil

The olives must be harvested directly from the plant, manually, by mechanical means or by “picking”. Before milling, the olives must be washed with water at room temperature and cannot undergo other treatments. For the extraction of the oil, the use of only traditional mechanical and physical processes is allowed such as to prevent the alteration of the quality characteristics of the fruit.
